Gaziantep Cuisine: A Table Thousands of Years in the Making

In 2015, Gaziantep became the first city from Türkiye to join the UNESCO Creative Cities Network in gastronomy. The title is not a marketing feat but the recognition of a living culinary culture: from kebabs to desserts, from soups and stews to geographically indicated ingredients, this cuisine has a dish for every season and every hour of the day.

This guide covers more than 128 dishes across 11 categories — each with its history, cultural context and, where applicable, its TÜRKPATENT geographical indication. Our aim is not to hand out recipes but to explain why beyran is a breakfast, why katmer belongs to wedding mornings, and why the pistachio of Antep is a matter of local pride.

Not sure where to start? Try our kebab guide or Antep desserts beyond baklava.
